Vanilla Coconut Smoothie



A vanilla milkshake with a healthy, vegan twist! This recipe is sweet, delicious, and easy to make. No added sugars and packed with protein and other nutrients, this well-balanced treat can be enjoyed any time of day and is sure to satisfy. All you need are 6 simple ingredients, and you are minutes away from having the perfect summer treat!


I N G R E D I E N T S:
  • 1-2 frozen bananas

  • 1 cup walnuts

  • 1/2 tablespoon ground cinnamon

  • 1/2 cup frozen coconut (optional)

  • 1 scoop vegan vanilla protein powder

  • 11/2 cups unsweetened coconut milk



I N S T R U C T I O N S:
  1. Add your frozen banana, walnuts, cinnamon, frozen coconut, protein powder and 1 cup of coconut milk to a blender. Blend at high speed until ingredients begin to combine.

  2. Start to add the rest of your coconut milk until blended smoothly. Add more coconut milk if needed to help with the blending process. The more milk you use the thinner your smoothie will be.

  3. Pour your smoothie into a 32 oz glass and enjoy! You can also add you smoothie to a bowl and top with extra banana, frozen coconut, and a dash of cinnamon.





NOTES:


If you can't find frozen coconut at your local grocery store, just buy some unsweetened shredded coconut or coconut flakes and freeze them yourself. However, this ingredient is completely optional and will be just as good without it.


If you have a nut allergy you can use seeds instead of walnuts. Flax seeds are a great source of protein and healthy fats and would make a great substitute for this recipe. Pumpkin seeds would also pair well with the cinnamon spice.


Feel free to add some strawberries for a strawberry vanilla milkshake or use chocolate protein powder for a chocolate milkshake!


This recipe is a great option for a summer dessert and healthy enough to enjoy for breakfast!
