Italian-Style Avocado Toast





Creamy avocado spread on toast has become a trending favorite for a reason. It's simple, delicious, and versatile. Avocado toast has been one of my favorite meals to play around with, and this Italian spin is by far my favorite variation. Roasted tomatoes with olive oil, garlic, and Italian seasoning take this avocado toast to a whole new level.




FOR THIS RECIPE YOU WILL NEED:


*1 slice of multi-grain bread

*1-2 tablespoons plain vegan cream cheese (I use the brand Go Veggie, plain cream cheese: Products | Cheese Alternatives | GO VEGGIE® (goveggiefoods.com)

*1/2 of an avocado, sliced

* 1 tablespoon olive oil

*1 cup sliced grape tomatoes

*1/2 tablespoon minced garlic

*1/2 teaspoon salt

*1/2 teaspoon garlic powder

*1/2 teaspoon Italian seasoning


DIRECTIONS:

  1. Preheat oven to 400 degrees.

  2. Slice your grape tomatoes in half. Arrange your tomatoes on a small baking pan in a single layer. Add your fresh garlic and drizzle with olive oil. Sprinkle your salt, garlic powder, and Italian seasoning over the tomatoes. Roast for 15 minutes or until tomatoes start to cook down.

  3. Toast your bread. Spread your cream cheese onto your toast, add avocado, and top with your tomatoes.

  4. Serve and enjoy!




NOTES:

* You can make this recipe gluten-free by using gluten-free bread. Another one of my favorite gluten-free options is using a sweet or regular potato. Just slice it up and toast it in the oven or a toaster oven.

*This recipe only makes one slice of toast so, feel free to double the ingredients for 2 slices.

*Store the other half of your avocado in an air tight container with a little bit of lime juice.

*If you don't have access to vegan cream cheese, skip it and make a spread with your avocado instead.

*In a rush? No problem! Just sauté your tomatoes, olive oil, garlic, and seasoning in a skillet on medium high heat for 5 minutes.
