Chocolate Avocado Pudding


When you think of avocados, the last thing that comes to mind is chocolate. But, when you mix avocado with the right ingredients, it actually makes for a luscious dessert that's sure to satisfy your chocolate cravings, without the guilt!


About a year ago, I started adding avocados to my smoothies to simply sneak more healthy fats into my diet. But, I was surprised to find that avocado added a creamy element to my morning smoothie. This inspired me to experiment more with avocados and put their potential for a decadent dessert to the test. The result was this rich and velvety chocolate pudding.


This chocolate pudding recipe is a quick and healthy treat. The best part is that you can't even taste the avocado; just pure chocolate bliss. I only used three simple ingredients for this recipe and topped it with some vanilla "nice" cream, fresh fruit, and coconut chunks for an added burst of flavor.



HERE'S WHAT YOU'LL NEED:


FOR CHOCOLATE PUDDING:


*2 ripe avocados

*1 teaspoon vanilla extract

*2 scoops of vegan chocolate protein powder (I use the brand Vega, Protein & Greens, Chocolate Flavored powder)


FOR VANILLA "NICE" CREAM (OPTIONAL):


*1 frozen banana

*1/2 teaspoon vanilla extract


TOPPINGS (OPTIONAL):

*Strawberries

*Raspberries

*Coconut chunks (unsweetened)


DIRECTIONS:

  1. Add avocados, vanilla extract, and chocolate powder to a blender or a food processor and blend until smooth and creamy. Scoop your pudding into a bowl and set aside.

  2. Make your vanilla "nice" cream by blending your frozen banana and vanilla extract. (You may need a splash of non-dairy milk to help with the blending process). Blend until smooth.

  3. Add your vanilla "nice" cream to your chocolate pudding.

  4. Add any other toppings & enjoy!




NOTES:


-Enjoy this treat for dessert or eat it for breakfast!

-The toppings for this recipe are totally optional, so have fun with it and make it your own!

-You can also substitute the chocolate protein powder for regular cocoa powder. Just make sure you add some sweetener (I like to use Stevia or maple syrup). Adjust to your preference.

-The riper the avocado, the creamier the dessert.
