This banana bread oatmeal is the perfect cozy treat for the winter months. This oatmeal is subtly sweetened with banana, spiced with cinnamon for that traditional banana bread flavor, and has an added kick of turmeric and black pepper to help fight inflammation.
Turmeric is an amazing spice to add to any recipe. Turmeric is most often recognized for it's antioxidant and anti-inflammatory properties but, it also lowers blood sugar levels, controls pre-diabetic symptoms, helps in detoxifying the body, improves insulin sensitivity, and can promote weight loss. Because of this, turmeric is a wonderful way to naturally manage symptoms of PCOS.
I add turmeric to almost all of my recipes because of its powerful medicinal properties and its abilities to heal and restore the body; you can sneak it into any recipe to give your meals an extra boost. Making oatmeal is one of my favorite ways to consume turmeric since it pairs so perfectly with cinnamon; and this particular recipe does not disappoint.
This oatmeal tastes just like banana bread and is a healthier alternative for everyone! Not only is this recipe vegan, it's also gluten free, low glycemic, and can be modified for food allergies.
FOR THIS RECIPE YOU WILL NEED:
* 1 cup gluten free, whole grain rolled oats
* 2 cups unsweetened coconut milk
* 1/2 teaspoon turmeric
* 1 teaspoon cinnamon
* pinch of black pepper
* 1 overripe banana
* walnuts & banana for garnish *optional*
DIRECTIONS:
Add your oats and coconut milk to a sauce pan and bring to a boil.
Add your banana, turmeric, cinnamon, and black pepper. Reduce heat to medium, stirring oatmeal constantly until you cook down your banana.
Once your oatmeal thickens, pour into a bowl and add sliced banana and walnuts.
Serve & enjoy!
NOTES:
Nut allergies? No problem! You can substitute rice or oat milk & garnish with pumpkin seeds or sunflower seeds.
Since this recipe is sweetened only with banana, you can also top it off with some maple syrup to make this oatmeal sweeter.
**DON'T SKIP THE BLACK PEPPER** black pepper enhances the absorption of curcumin found in turmeric. Adding a little bit of black pepper will magnify the benefits of turmeric
