Vegan cooking is a form of creative expression for me. I love to experiment with flavors to create foods that are comforting for the body and the soul. Finding the perfect plant-based substitute is all about using ingredients that heal & nourish the body to create traditional flavors. Over the past 5 years, I've found that chickpeas are a great substitute for chicken. I've used chickpeas for fajitas, soups, chilis, pot pies, and burgers; but, this buffalo chickpea sandwich is by far my favorite.
Chickpeas have amazing health benefits. They contain a starch called amylose that gets digested slowly in the body and can help keep blood sugar & insulin levels stable. They are high in dietary fiber and can greatly improve digestion and gut health. They are known to lower cholesterol and can even improve your mood and memory. These wonderful legumes are great for anyone but, can especially improve those who suffer from metabolic diseases such as diabetes & PCOS.

FOR THIS RECIPE YOU WILL NEED:
* 1 (15 oz) can of chickpeas (drained and rinsed)
* 1 tablespoon vegan cream cheese
* 3 tablespoons buffalo sauce
* 1 teaspoon garlic powder
* Salt & pepper to taste
* Multi-grain bread, lettuce, tomato, or any other toppings for your sandwich
DIRECTIONS:
Add your chickpeas and vegan cream cheese to a food processor and lightly pulse until you reach your desired consistency.
Add you mixture to a small mixing bowl and mix in your buffalo sauce, garlic powder, salt, & pepper. Adjust seasonings to your preference.
Toast your multi-grain bread, spread your buffalo mixture onto your bread and add your favorite toppings (I like mine with lettuce and tomato).
Serve & enjoy!
NOTES:
You can make this recipe gluten-free by using gluten-free bread or lettuce wraps. This mixture would also be great as a salad topper!
If you don't have a food processor, just mash your chickpeas with a fork instead!
This recipe makes roughly 2 servings, so feel free save the leftovers for another day!
If you're having a hard time finding vegan cream cheese, you can skip it and add some extra buffalo sauce or plain dairy free yogurt.
