Pot Roasted Vegetables with Mashed Potatoes


These pot roasted vegetables are a healthy and delicious alternative for the cold winter months. This hearty and savory recipe includes only whole plant-based ingredients making it the ultimate comfort food. This blend of vegetables and peppery, aromatic spices will leave you feeling nourished and satisfied.


FOR THIS RECIPE YOU WILL NEED:


FOR VEGETABLES:

* 2 yellow onions

*2 cups baby carrots

*2 tablespoons olive oil

*1 crown of broccoli

*2 cups brussel sprouts

*4 cloves garlic (minced)

*1 1/4 cup dry red wine (I used a cabernet sauvignon)

*2 tablespoons tomato paste

*2 tablespoons thyme

*1 tablespoon turmeric

*2 bay leaves

*2 cups vegetable broth

*Salt & pepper to taste


FOR MASHED POTATOES:

*1 1/2 pounds of potatoes (I used baby potatoes)

*3 tablespoons vegan butter (I use country crock)

*1/4 cup non-dairy milk

*2 teaspoons garlic powder

*salt & pepper to taste


DIRECTIONS:

  1. Prep all your veggies. Peel and slice your onions, cut up your broccoli crown into bite sized pieces, mince garlic, and slice your brussel sprouts in half.

  2. Heat your olive oil in a large pot on medium high heat. Add all your veggies and cook for about 10 minutes.

  3. Add your red wine and bring to a boil.

  4. Add your tomato paste, vegetable broth, thyme, turmeric, salt, pepper, and bay leaves. Mix well & bring to a boil.

  5. Reduce heat to low and simmer for 30 minutes, or until your carrots cook through.

  6. While your stew is cooking, boil your potatoes. Once your potatoes are softened, drain the water and mash your potatoes with a fork. Add your butter, non-dairy milk, & seasonings (adjust to your preference).

  7. Once your veggies are done cooking, remove your bay leaves.

  8. Serve your veggies over your potatoes and enjoy!


NOTES:

-This meal makes about 4-6 servings making it great for a family dinner, or you can store the leftovers and enjoy another day.

-This recipe is super versatile so, feel free to use whatever vegetables you prefer.

-If you want to skip the potatoes you can add more vegetable broth to make a soup. Make sure you adjust your seasonings as needed. You can also add flax seed meal as a thickener to make a rich stew.
