These cheesy kale chips are a great way to add greens to your diet, while also satisfying your cravings for something salty & zesty.
The cheese is made from a base of cashews and nutritional yeast to give it that nutty flavor and extra boost of nutrients; and the kale is dehydrated for that perfect crispy texture!
Who said eating greens has to be boring??
This recipe is easy to make but, it does require a 10-12 hour dehydration process. I highly recommend prepping your chips in the evening & allowing them to dehydrate overnight! The good news is you can make these chips in the oven, so no need for a dehydrator.
HERE'S WHAT YOU'LL NEED:
*2 large bunches of kale
*1 cup cashews (raw or roasted)
*1 red bell pepper
*1/3 cup nutritional yeast
*4 tablespoons olive oil
*1 lemon (squeezed)
*1/4 cup water
*2 teaspoons salt
*2 teaspoons garlic powder
*1 teaspoon smoked paprika
DIRECTIONS:
Preheat your oven to 170 degrees, or the lowest setting.
Wash your kale & remove the leaves from the stems. Place your kale into a large baking pan.
Add your cashews, bell pepper, nutritional yeast, olive oil, lemon juice, water, salt, garlic powder, & smoked paprika to a blender. Blend until smooth. You can add more water if needed. You should have a thick and creamy texture.
Pour your cheese sauce over your kale and mix until evenly coated.
Place in the oven and dehydrate for 10-12 hours. Kale should be crispy.
Serve & enjoy your chips; or store in an air tight container & place them in the fridge.
