Vegan Christmas Cookies



These chewy sugar cookies are the perfect treat for the holiday season! Theses cookies are quick and easy to make, & only require 5 ingredients.


For these cookies I used a combination of almond flour and whole wheat flour for extra flavor/moisture, and coconut sugar. Coconut sugar has a low glycemic index & has a lot more vitamins and minerals than regular white sugar.

These cookies may be healthier but, they have the perfect texture and taste divine (even my dog wanted a piece)!





This recipe makes about 2 dozen cookies and doesn't require a lot of time in the kitchen! So, go ahead, get cozy & get to baking!



FOR THIS RECIPE YOU WILL NEED:

*1 cup vegan butter (I use Country Crock but, you can use Earth Balance, as well)

*2/3 cup coconut sugar & more for sprinkling

*1 cup almond flour

*1 cup whole wheat flour

*1 teaspoon vanilla extract


DIRECTIONS:

  1. Preheat your oven to 325 degrees. Line a large baking sheet with parchment paper & set aside.

  2. In a large bowl, beat together your butter & coconut sugar with a hand mixer until well combined.

  3. Add your vanilla extract, almond flour, & whole wheat flour. Mix until dough starts to form. The dough should be smooth but, not too sticky. Don't be afraid to use your hands to form the dough ball; adding more flour, if needed.

  4. Begin to roll 1 inch dough balls into your hands until smooth. Place your dough balls onto your prepared baking sheet & then use the bottom of the glass to flatten your cookies.

  5. Lightly sprinkle more coconut sugar on top of your cookies.

  6. Bake for 15 minutes.

  7. Remove from oven and allow them to cool before serving or storing them!




NOTES:

You can use regular butter, sugar, and all purpose flour for this recipe if you want more of a traditional sugar cookie. Just make sure the butter is softened.

You can also use gluten free flour for this recipe. Just make sure you buy a 1:1 ratio flour.

This recipe is best enjoyed on the same day. If you do decide to store them, use a container that allows for some air to flow through to prevent them from molding.
